Quesa-pizza

Two words
...the most exciting combination of two words that exist...
These two words have taken humanity from the depths of it's psyche to the farthermost reaches of its imagination. They have led us on a journey, taking us from the realm of cave dwellers to beyond the reaches of our planet. They fuel our dreams and solve our problems.
They tempt us, nudge us and call us.
They have taken us to our darkest hours as well as to our highest achievements
What two words am I referring to?
What if?
Two simple words that know no boundaries.
Before they became words, there was the notion, the concept...the what if?
We carry the What if with us all of the time. It's programmed into our DNA.
What if I tried to fly?
What if it were possible to reach the stars?
What if I took a different route to work?
What if I had tea instead of coffee?
What if I took elements of two dishes and merged them into one dish?
I realize, going from interstellar travel to making a recipe might seem like a far reach but, it's the same two words, in use, tying us to one another, great and small.
All dreams start somewhere.
All inspiration starts somewhere.
That somewhere just might be the What if that sends your taste buds out of this world
or it just might be the thing to snack on while you What if to the next destination.


What if one took the regular quesadilla and added Italian elements to it?
I wonder what if would taste like.
What would the salsa be like? I could use basil and oregano instead of cilantro.
The red pepper flakes would add some bite.
Then, one would , of course, use mozzarella and some freshly grated Parmesan.
Some pepperoni would be good...
What if?

Salsa Italia
2-3 Roma Tomatoes, chopped
2 Tbs Chopped Red Onion
3-4 Large Basil Leaves, torn into small pieces
A few sprigs Oregano leaves, chopped (about a teaspoon)
Italian Flat Leaf Parsley, chopped
1 tsp Olive Oil
2 Tbsp Balsamic Vinegar
Salt (about 1/4 tsp)  and Freshly Ground Pepper
Red Pepper Flakes



Flour Tortilla
Pepperoni
Shredded Mozzarella
Freshly Grated Parmesan
Olive Oil
Lightly brush tortilla with a little olive oil.
Turn tortilla over.
Sprinkle half of the tortilla with Mozzarella.
Grate some Parmesan over the Mozzarella.
 Slice and place Pepperoni over the cheese. 
Fold the tortilla in half.
 Heat a skillet or griddle on medium heat.
With a large spatula, carefully place the tortilla on griddle.
Let cook a couple minutes, melting the cheese.
Lightly press down with your spatula, letting the melted cheese ooze out a bit and caramelize around the edges.
When the cheese is oozing and the tortilla has turned a golden brown, flip the tortilla over.
Brown the second side. 
Place on a cutting board and slice into four pieces.
Serve with Salsa Italia. 
What if I took one bite?
What if I ended up eating the whole thing?
What if I excused myself to try just a bit more?
