Summer Sub

Grilled Skirt Steak with Blueberry Ginger Jam
Blue skies, white fluffy clouds, fields of green, seeds sown, it's almost summer!
 After such a long winter, soft breezes gently beckon us, summon us, call us outside.
It's time to run barefoot through the grass,
ride bikes down old country lanes,
go on adventures that only warm weather can take us on.
It's time to explore, savor, and sun..
It's time to lay in the grass and daydream..
Counting clouds tends to work up just as much of an appetite as hiking through the great wilderness (or park) down the road.
 A summer sub just might be in order. It's just the thing to whisper summer dreams and fuel far away fantasies. 
Blueberry skies, miracle whip clouds..
zinging ginger
arugula fields forever ;)
sweet onions,
buttery sun bathing cheese,
earthy, peppery steak
crispy French loaf with a pillow-y inside cradling the summer, holding it safe for each bite of adventure.




Blueberry Balsamic Ginger Jam

1 cup Fresh Blueberries
1 teaspoon Freshly Grated Ginger
1 tablespoon Balsamic Vinegar
2 teaspoons Chia Seeds

The secret is in the chia seeds! They gel and thicken and do all of the work for you. There's no cooking involved, just a little mash and mix! What could be more perfect in the summer than a fresh and easy to make topping!
Mash the blueberries with a fork.
 Add the ginger and balsamic vinegar.
Add the chia seeds. Stir. 
Refrigerate about 15 minutes or until thickened. 


The Sandwich

1 Very Long French Baguette, slice into 4 OR 4 Hoagie Rolls
1 1/2 pound Flat Iron Steak
Coarse Kosher Salt and Freshly Ground Black Pepper
4 slices Swiss Cheese
Baby Arugula (or substitute Romaine if you like)
Sliced Onion
Salad Dressing such as Miracle Whip (optional)
Butter or Olive Oil

Okay, I know in the picture that's not really Swiss. It's Muenster! You caught me! But after tasting both and taking pictures of only the Muenster, the Swiss definitely wins out. Feel free to use your own favorites! 
Season the steak liberally with salt and pepper. Preheat grill to high. Grill about 7 minutes on one side. Flip and grill another 4 minutes or so, until medium rare. 
Let rest about 15 minutes.
 Slice thinly against the grain. 
Slice the baguette open. Spread a thin layer of olive oil or butter on your French Baguette. Toast on the grill of under a broiler. 
Spread a generous layer of blueberry jam on the top layer. Spread salad dressing or Miracle whip on the bottom layer (if using).
 Layer the steak, onion, arugula or romaine, and cheese. 
Wrap it up in some pretty parchment.
Place in your backpack, picnic basket, or cooler.
Eat when hungry.
