Lenten Lunches, Holy Crabby Guacamole!

We're halfway through my Lenten Lunches series, 5 sandwich ideas for Fridays in Lent. (and beyond)
Today's sandwich is my humble take on guacamole.
For many Fridays in Lent and throughout the year a tuna fish sandwich was staple. I actually love a good tuna sandwich and ate many of them while working at Subway years ago. I also loved their seafood and crab. So this lent, I felt a creative spin on the old seafood and crab and tuna salad were in order.
For this salad I used:
A Ripe Avocado
Chopped Red Onion
Sweet Corn
A Small Can of Crab Meat (located by the canned tuna)
A Small Can of Fire Roasted Green Chilies
The Juice of a Lime
Agave Syrup
Salt/Pepper

I mixed everything together (except agave) until smooth and creamy.
Add a bit of agave syrup to taste. It doesn't take much of it to make a huge flavor difference.
I used a whole wheat pita with a few alfalfa sprouts, crunchy romaine lettuce, tomato and pickled jalapenos.
The sweetness of the wheat complimented the creamy filling and the tangy jalapenos very well.
I lined the top and bottom of the pita to help keep it from getting soggy.

Not in the mood for a sandwich? This works well as a dip too. Chop up some pickled jalapenos and add to the mixture and ....
Creamy avocado, crunchy sweet corn, briny sweet crab meat, tangy spicy jalapenos, zesty lime...mmmm mmm....
Eat well, my friends.
