When Life Hands You Lemons: Lemon Coconut Dream-osa



Dinner was over and I was in the kitchen cleaning the dishes. The TV made up the only sound in the house other than the running water...and the occasional plates or glasses meeting each other with 'clanks' and 'clinks'. I could hear the commercials going and the warm water ran over my hands and then the announcer for the lottery came on.
I half listened to each number while at the same time reminding myself of the myriad of other things I had left to accomplish that evening. I heard a few of the numbers. I thought I maybe played a couple of them. Maybe I was even lucky enough to win at least $50.00. It would help with some groceries for the week. I could take a break for a second.
I dried my hands and fished out the ticket from my purse. I played every once in a while, but not on a regular basis. In fact, if the jackpot reached over a certain amount, it tended to make the news and reminded me to maybe play...after all you can't win if you don't play. I laughed to myself thinking of how many people have that same thought running through their minds when they buy a ticket.
Today's jackpot was 40 million dollars...
So there I was, ticket in hand, red border, blackish grey numbers, a few wrinkles from being shoved into my purse. I held the ticket up against the TV as they reviewed the numbers....
"Once again the numbers are.." read the man on the TV
One match...Yay!  Two...Nice   Three....Holy Cow!   Four... Um no, Really?!?
It was at this point I began to feel the blood start to slowly drain from my face.
My hands and face started to tingle. I was holding the ticket up now with two hands as it seemed to get heavier.
Five number...No way, this really isn't happening...
I think now I stopped breathing. The sixth number seemed to takes hours to be called...
Sure enough SIX NUMBERS!!!!!
Forty Million Dollars!
I was shaking now and a million....or more like forty million thoughts were running through my head.
What do I do with the ticket? How do I keep it safe.. Can this be real?!?!
I couldn't breathe. I was excited, relieved, worried...every emotion inside me welled up so much to such a point of excitement....
I woke up...
very confused
My hands were held up in the exact position they were just moments before but instead of standing in front of a tv with a winning lottery ticket, I was laying in a bed, in a darkened room with nothing in my hands except the night air.
How could this be?!? I looked around thinking I had dropped the ticket. I realized then that it was just a dream....a very cruel dream, at that. It had been so real. I was holding the ticket.
I knew the numbers! This wasn't right!
For months I played those numbers thinking perhaps it was a sign, but unfortunately, the dreams was just one of those lemons life hands you.
So yes, I know what it feels like to win the lottery. It was sweet until I awoke and things turned sour. So far, winning is only in my dreams.

Lemon Coconut Dreamosas

 
These are creamy, dreamy, fizzy and fun...and you don't have to worry about waking up while drinking them. They're very real and very good.
Now if only I could remember those winning lottery numbers..
 

The Whipped Coconut Cream

1Can Coconut Milk, refrigerated
1 Tsp Powdered Sugar
 
Open the can of coconut milk and carefully scoop out the coconut solid.
Save the rest for another use.
 With your mixer, beat the coconut solids until light and fluffy and it forms peaks, adding the teaspoon of powdered sugar along the way.

Store in the refrigerator in a sealed container until you are ready for it. It will last a few days to a week.
 

The Lemon Syrup

2 Cups of Water
2 Cups of Cane Sugar
4-5 Lemons
2 Limes
 Heat sugar and water until the sugar dissolves. Cool.
Juice 4-5 lemons and 2 limes until you have about 3/4 cups of juice.
Add to the syrup and refrigerate. 
 Your syrup should last a couple weeks. Store in the refrigerator.
 

The Dreamosas

Your Lemon-Lime Syrup
1 Can Coconut Milk, shaken well
Mineral Water, Sparkling Water, or Soda Water
Whipped Coconut Cream

 In the bottom of the glass, pour 1-2 ounces of lemon syrup.
 Add coconut milk and a few ice cubes until glass is about 3/4 full. Stir well.
 Add the mineral or soda water to fill glass and stir.
 Top with whipped coconut cream to garnish.
