Jalapeno Margarita with Chili Limed Rim; This Girl is on Fire


She's just a girl and she's on fire.
Hotter than a sweet chili, smoking hot all day
She's drinking in a world and it's on fire
Filled with voracity, but she knows she can drink away

She's really drinking them down
And now she's buying a round

It look so cool, but it's ablaze
With spice, it can burn your eyes
Better look the other way
Sip this drink, and you'll never be the same
You'll be on top of the world
Hottest of the margaritas the girls say
 
She's just a margarita and she's on fire

The Jalapeno Syrup

2-3 Jalapenos, sliced in half lengthwise
1 Cup Raw
1 1/2 Cups Water
 Turn broiler on and line up your jalapenos on a sheet of aluminum foil.
 Broil until the skins are charred, remove from heat.
 Fold the aluminum foil over and let the jalapenos steam for about 10-15 minutes.
 Open your jalapeno package and remove the skins from your jalapenos.
The seeds and especially the ribs of the jalapenos contain most of the heat. Remove the ribs and seeds if you don't feel like getting too hot.
 Bring 1 cup of sugar, 1 1/2 cups water and your jalapenos to a boil and dissolve the sugar in the water.
 Let the mixture sit for a few hours. Do it in the morning. Remove the jalapenos later that night.
Store the syrup in the fridge. It should last a couple weeks.
 

The Chili Limed Rim

1 tsp Kosher Salt
1 Tbsp Raw or Cane Sugar
1/2 tsp Chili Powder
Lime Zest
 Combine ingredients with your fingers, gently rubbing the lime zest into the sugar/salt.
 Run a lime wedge around the rim of your margarita glass.
Dip glass into your chili lime spice mix.
 Okay, we're almost there....

The Margaritas

1 1/2 oz Tequila (My favorite is Milagro)
1 oz Triple Sec
1 oz Jalapeno Syrup
1 1/2 oz Fresh Lime Juice
 Fill your drink shaker with ice.
Add ingredients.
Shake it like you mean it.
 Pour into your chili limed rimmed glass.
 Sip slowly and enjoy the heat.
 How you like it, my friends? Hot, Hot, Hot!!!!
