My love, oh my darling, I'll make you breakfast today
And since I'm the one cooking, it's an unconventional way
Eggs and prosciutto, greens and Ciabatta
Don't tell me it's something you can't eat a lotta
You are the butter for my toast, the bread for my jam
Please, oh please try my greens, eggs and ham
It's crispy and buttery, tangy and hot
The creamy yolk blankets everything, hitting the spot
One bite you'll be won over, left wanting for more
One bite you'll fall in love again Oh C'est l'amour
Ingredients
One bunch Mustard Greens
1/2 Cup Sweet Onion, chopped
1 Apple (I used Jonathon but any sweet/tart variety would work, like McIntosh)
4 Slices Prosciutto
1/4 Cup Chicken Stock
2 Tbsp Apple Cider Vinegar
a Pinch Red Pepper Flakes
2 tsp Honey
Ciabatta Rolls
1 Tbsp Butter, melted
2 Tbsp Olive Oil
1 Clove Garlic, halved
Salt/Pepper
Eggs
Butter
Salt/Pepper
Hot Sauce
Wash and trim the greens of any stems.
Peel and core apple; slice into thin chunks.
Slice onion.
Slice greens into bite-sized pieces.
In a frying pan over medium heat, fry the prosciutto a couple minutes on each side until crisp.
Set aside.
Add onions and apples to the pan and soften, 2-3 minutes.
Add chicken stock and apple cider vinegar.
Add Greens. Drizzle honey over the green. Add a dash of red pepper flakes.
Stir and cover 2-3 minutes, until slightly wilted.
Chop the prosciutto and add to the greens.
Meanwhile, slice your Ciabatta rolls in half.Turn your broiler on.
Combine the olive oil and melted butter.
Coat the cut side of the rolls liberally with the mixture.
Sprinkle with salt and freshly ground pepper.
Place bread under the broiler for 2-3 minutes (about 3" away from the heating element.)
Do not look away or walk out of the room or answer the phone.
Remove the bread as soon as it turns a beautiful golden brown.
Take a split garlic clove and rub it over the nooks and toasted golden butter crannies.
Now, melt a pat butter in a pan over medium to medium to medium high heat.
As soon as the foaming subsides and the butter begins to slightly brown, crack the egg and let it cook to your liking. Sprinkle it with a bit of kosher salt and freshly ground pepper.
Place the greens on top of the garlic Ciabatta.
Place the egg on top of the greens.
Sprinkle liberally (or to taste) with hot sauce.
And you now have yourself a dish of greens, eggs and ham..
and one satisfied chickie I am.
